WHAT I EAT IN A DAY / MY GO TO HEALTHY MEALS

Green pineapple smoothie
2 cups frozen pineapple
3 steals celery
2 cups spinach
1 cup water
Blend all ingredients until smooth.
Veggie hash browns
1 lb shredded hash browns
1 cup mushrooms sliced
1 cup peppers/onions mix
2 cups spinach
1/2 tsp each (garlic powder, onion powder, paprika)
In a skillet over low heat place all your ingredients and mix together. Do not cover, and cook for about 30 minutes or until there is no more steam. Flip and cook another 10 minutes until crispy.
Stuffed sweet potatoes
2 sweet potatoes (bake 450 for 40 min)
2 cups chili (I use the one from our instant pot book)
Cashew sour cream
To make cashew sour cream take 1 cup of cashews and cover with water. Soak for 2-4 hours. When ready drain your cashews and place in blender with 1 tbsp lemon juice, 1 tbsp apple cider vinegar, 1 tsp salt and 1 cup of water and blend until smooth.
Cut open your sweet potato, stuff with chili and top with chives and cashew sour cream.
